Delightful Cool-Off Drinks

With warm days behind us and even warmer days ahead, we went to Pinterest to find the perfect drinks to mix and cool off with this summer!

Summer Pineapple Strawberry Cooler:

1 12oz can frozen pineapple juice concentrate, thawed
1 6oz can frozen limeade concentrate, thawed
4 cups cold water
1 liter club soda, chilled
Ice cubes
Fresh strawberries (optional…but extra yummy)
6in wooden skewers with assorted fruits on them, like orange slices, lime slices, raspberries and kiwi

To enjoy:
Combine pineapple juice, limeade and water. Chill for at least 30 minutes. To serve, transfer to pitchers and add club soda, ice cubes and fresh strawberries. Accent each glass with the fruit skewer. Sit back, soak up the rays and drink up this cool refresher!

Grapefruit Margarita:

3oz tequila
2oz orange liqueur
2 fresh squeezed limes
1 fresh squeezed grapefruit
Salt for rim (optional)
Grapefruit wedges, for serving (optional)

To enjoy:
Mix tequila, orange liqueur, lime and grapefruit juices well. Rub one of the used lime or grapefruit rinds around the rim of two glasses and dip in cocktail salt. Fill each glass with ice and pour in margarita. Makes 2 drinks. An atypical margarita, but a delicious one!

Watermelon Lemonade:

½ of a large watermelon
4 lemons
2 tbsp agave syrup
3 cups fizzy water (either sparkling or soda)

To enjoy: Carve the watermelon in half and store half in the fridge. Cut and gut the other half of the watermelon and pick out the seeds. Put the chunks of watermelon in the blender and blend. Pour the slushy juice through a sieve into a large bowl; you’ll end up with a big bowl of juice. Squeeze lemons into a small bowl and pour it through the sieve into the bowl of watermelon juice. Add the agave and stir well. Taste for sweetness/sourness and adjust accordingly. Pour into a pitcher. Fill up a glass with ice and fill ¾ full with lemonade. Top with fizzy water, add a straw and chill out!
